Yeah buddy....its that time of the year to fire up them grills. I know Mojo and Ali already been burning this year. Post ya recipes, tips, techniques, and ask all grilling questions in this thread. One of the grilling aficionados will answer your question. I got recipes for pretty much everything, so holla at me for something new. I got tons of grilling books here..

This past weekend I took a couple of big ass baking potatoes and cut them long ways about 1/4 inch thick. Sort of looked liked big ass thick potato chips.
Lightly coated each side with olive oil and simply sprinkled on each side:
Kosher salt
Black pepper
Red pepper (if thats your thing)
Garlic powder.
Grill on a medium heat flipping over every couple of minutes or so.........
Grill until each side is nice and golden brown...........
Went perfect with the 1 inch thick rib eyes and grilled corn coated lightly with a bit of chipolte flavored butter...........
Yeah boy time to get it in........
And Syn I aint get my new grill yet :mad:

I ain't even set up the weber joint yet...i copped a weber smokey joe which is the small one they make. Imma put the big one together maybe this weekend. My big grill got 1-2 more cooks left in it.
I make Jerk chicken on the grill....I get the Grace Brand sauce
put it in a ziploc bag with some Jamaican scotch bonnet pepper sauce, vinegar,water
and let it marinate 12-24 hours before it hits the grill....For less spicy chicken for the faint of heart people...I just substitute the Grace Hot Jerk Sauce for the Mild one...I get mega props er time I make it....I like to use chicken thighs...but I will on occasion use Wing sections.

Man here's the best Jerk recipe in the world.....I make the paste and keep a jar ready when I'm grilling......ask Syn this Jerk Ribeye Recipe is on point :eek:
RIB EYE JERK STEAK
.
1 16oz cut of boneless or bone-in Rib-Eye Steak.
Ingredients for jerk paste:
1tsp Nutmeg
2tsp White Pepper
¼ C Black Pepper
½ C Kosher salt
¾ C freshly ground Allspice
¾ C Brown Sugar
¾ C Orange Juice
1 whole Scotch Bonnet pepper
1 bunch Jamaican Thyme
8 whole Garlic cloves
¾ C chopped Scallions (green onions)
2 cups whole Ajicito pepper (flavorful but not hot)
METHOD:
Put ajicito peppers, scotch bonnet pepper, garlic cloves, thyme and scallions in food processor and pulse until it forms a paste. Then add the remaining ingredients except for the orange juice and blend. Slowly stream OJ into the processor. (Jerk paste keeps for approximately 1 week in the refrigerator). Smear paste over one side of steak and season the other side with salt and pepper. Marinate for 1 hour or up to 48 hours. Place steak on a hot grill and cook to desired doneness.
Drop this at your next cook-out and you will be crowned the Grill King in your hood!!!!!

....I like to use chicken thighs...but I will on occasion use Wing sections.
Not trying to promote my coonery but chicken thighs are the best part of the chicken to grill and fry! That is all!

Shrimp turns out good on the bbq, you can crush some garlic and mix it with butter and parsley, then brush it on while it grills. Also it may need a lil salt once its done, depending on taste.
Wish I could have a grill :( I might have to leave Alexandria lol.

lmao....unless you my brother, my other brother, moms, aunt, or sis-in-law, don't critic me on how I grill when I'm grilling. Off the grill, if we chillin in the house, and i'm not grilling, I'll talk it up with you all day on grilling, and listen. I have no problem coming on here and trying other peoples recipes and stuff, but don't come to my house when I'm grilling, stand there and tell me when to flip my steaks.
One thing I do not do is go to a cookout at someone else's house and try to tell them how to grill or tell them how to season something. If they ask me, i'm there to help, otherwise I keep my mouth shut. But if I show up to your house and you got reynolds wrap on your grill grate while cooking burgers cause you don't know how to keep the flame down, I will take a twitpic and clown you on twitter.

The Syn Recipe of the Day
One of my favorite grilled foods are shellfish...Oysters, clams, and mussels. These are IMO the easiest things to grill, even easier than hotdogs.
Place the shellfish on the grill over direct heat. Wait 3-4 minutes for the shell to pop open slightly, then remove. When the shell opens, the shellfish is cooked and safe to eat. I typically top off my clams and oysters with hot sauce and a touch of old bay. You cannot go wrong with this.
One very important tip is that if the shellfish does not open after 8-10 minutes, trash it. This goes for any method of cooking shellfish.

If you want a good charcoal grill, it will cost you $90 for one of the best one on the market. The weber one touch is renown as one of the king grills of charcoal grilling. Weber uses quality materials, and the kettle shape of the grill was invented by them, because it aids heat flow and heat retention. There are many grills that cost a lot more, but in the less than $300 bucks category, it is king. It may not look like much, but trust me, it is a monster when it comes to grilling. There are many imitator grills out that look like it, but none hold a candle in the sun to it.

Syn Grilling Tip of the Day
STOP USING LIGHTER FLUID!!!
A few weeks ago, I had been talking to a lady at work, and she asked me for a rib recipe. I wrote one down for her, and she was excited, went home over the weekend, and cooked her ribs. When she came back monday morning, she was very happy with the results, and brought me one to try during lunch. I normally don't eat food other people cooked thats not fam, but it would have broke her heart if I didn't, so I took a small one. Right when I bit into it, I tasted the lighter fluid. Knowing the recipe I gave her takes about 2 hours to cook, I simply asked one question....You had to restart your grill in the middle of cooking didn't you? She looked at me and said, 'how do you know'.....
LIGHTER FLUID IS THE DEVILS FLUID. I CAN TELL WHEN FOOD IS COOKED ON A GAS GRILL AND WHETHER YOU USED LIGHTER FLUID IN THE FIRST BITE.
Ali put me on to this about 4-5 years ago, when I started getting serious about grilling. I want all of you charcoal grillers to go to lowes or home depot and purchase a charcoal chimney. They look like this:

You will see a few....the weber one for about $20, and a few others. Get the cheapest one, normally $5-$7 dollars. They all do the same job, none better than the next.
Stuff the bottom of the chimney with balled up newspaper. Normally about 2 full size newsprint sheets will fill it. Then fill the top with charcoal. Place the unit on your grill. I put it on the rack that holds the charcoal, but it can go on the top cooking grate, as long as you brush it off and clean it good before using.
Light as much of the newspaper as you can through the holes in the bottom. You will instantly start to see the smoke rise through the charcoal. Let it set and burn for 8-10 minutes. When you have flames coming out of the top, and the charcoal has started ashing or glowing orange, it is ready. Pour the charcoal into your grill, put your cooking grate on, and you are ready to cook. If you are good with this, you can be cooking at 500 degrees in 10 minutes.

I have 2 grills,gas and a 33 gallon water heater converted into a grill.. I use my gas grill for the quick food prep,but when I get serious I pull out the charcoal joint out...I dont know my recipe I just cook to suit..lol

The primary reason I use a gas grill is for convenience. I found that with a charcoal grill i was less likely to fire it up on a whim... or in the middle of the week. With a gas grill... you can have it blazing hot in 9 minutes.
The most important thing in my opinion when it comes to grilling in marinating...
For most meats they say marinate 30 minutes or so... but I'm a firm believer that the longer you can keep it marinating the better it comes out. I'll often buy and marinate my stuff the day before and then take it out of the frig and let it warm at room temperature for 20 minutes or so before putting on the grill
As far as marinating... I have some go-to bottles... but I started off just mixing and matching whatever I had at the crib.... soy sauce... pineapple juice... bbq sauce etc.
Also, don't sleep on dry rubs.... mixing dry ingredients (salt, pepper, season all, etc) and then patting it onto the meat instead of soaking it the liquid marinate. Still you should let it sit before cooking to let the flavor soak in.
basic bbq rub is paprika, cumin, salt, pepper, sugar.
basic buffalo sauce is equal parts of butter, hot sauce, and apple cider vinegar.
Yeah, ya'll are getting real technical in here. Youtube vids of this stuff would be awesome.
Also, some of those Indian/Paki/Persian marinades are delicious. So far I've tried Tikka Masala and Tandoori. Both were excellent. They're sometimes hard to find and you have to go to one of those ethnic/international grocery stores. They're usually less than $1 per box.

When I get a grill...I'm getting one of these. Everyone I know that has one swears by it. I aint ready to drop a G on a grill just yet..I'm not that hardcore with it.

I got two grills, I started with the Weber but then I got me a kenmore gas grill. Somebody said that it is convenient and that shit is true. I'll flame up a few ribeyes in the middle of the week with no hassle or nothin. But when I really gotta do some grillin I'll fire up the weber for ribs and stuff. It's just a good idea to have both in my opinion.

LOL...I love NOVA, hate the housing prices and the traffic. I can get anywhere in Richmond in 20 minutes....easy...lol...and rush hour to us is waiting more than 2 lights at Patterson and Parham.
Me and Ali been saying we gonna throw a big ass cookout one day and invite DZ...hopefully this summer we can make it happen. But I think we'd need to hire a videographer for the event because it would be epic...alcohol and jokes....man...the pics alone would haunt DZ forever. RARE
125°F
Very red, cool center.
MED RARE
135°F
Red, warm center.
MEDIUM
145°F
Pink, hot center.
MED WELL
155°F
Hint of pink, hot center
WELL DONE
165°F
No pink, hot center.
I cook my steaks taking an extra virgin olive oil and coating both sides of the steak. I then season with Montreal Steak seasoning, and allow the steaks to come up to room temperature. I allow the steaks to sit out normally 30-45 minutes. I cook my steaks anywhere from 500-600 degrees. I like my steaks to be medium rare, so I will put it over direct heat for 4-5 minutes on one side, flip it, then 3-4 minutes on the other. Make sure you have a good meat thermometer to check the temp of the steaks. I then remove the steak from the grill, and allow it to rest 6-8 minutes. This is where the mistake of overcooking steaks occurs. When you remove the steak, it will continue to cook for another 3-4 minutes. The temps listed above are for when you remove the steaks from the grill.

My other grill I made in shop class is a 55 gallon drum..My pops wouldn't let me take that one with me when I went to college and he still uses it to this day..I might restore ole Betsy but my hinges are the main problem.. I used industrial size chain links as hinges and now they have began to rust out..making it hard to open and close the grill..I'd love to have one of these

Funny thing is....I think AliAllWorld and I are the exact same way. I look at my wife crazy when she wanna get on my grill.
And yeah...i'm still grilling on the regular...i'm grilling right now...
